This is the recipe to make when a room full of people wants something warm and only one of you is free to make it. As written it fills eight 8 oz cups. A table of ten drinking two cups each needs about 4.7 litres: scale it two and a half times in one stockpot, or brew three batches.

Ingredients

  • 1.9 litres of water, which is 64 fluid ounces
  • 8 teaspoons of loose leaf black tea, about 16 grams, or 8 tea bags
  • 2 cinnamon sticks
  • 4 whole cloves
  • 3 crushed cardamom pods
  • Two coin-sized slices of fresh ginger root
  • The peel of one orange
  • Honey or maple syrup, served at the table rather than stirred in

Instructions

  • Simmer the spices. Bring the water to a boil with the cinnamon, cloves, cardamom, ginger and orange peel, then hold it at a low simmer for five minutes.
  • Steep the tea off the heat. Take the pan off the burner, add the tea and steep four minutes, so the cup still tastes of tea rather than only of spice. Strain into a warmed carafe.
  • Keep it hot, not standing. Hold it in a thermal carafe rather than on the table, and refrigerate whatever is left within two hours.
  • Sweeten in the cup. Leave the honey or maple syrup beside the pot so guests choose. Milk suits the spiced version and does not suit the fruit teas.

Chilled leftovers pour well over a full glass of ice. If you are brewing specifically for iced tea, make that batch double strength so the ice does not water it down. For everything else on the table the baseline is one tea bag or two grams of loose leaf per eight ounces: black tea three to five minutes at 200–212°F, green tea two to three minutes at 160–185°F, herbal five to ten minutes at 205–212°F.
