Autumn Apple Tea Recipe

This is the fall drink to make when a pot of plain tea feels too plain. Half tea, half apple juice, warmed with whole spices: a perfect pot for cold days. As written it makes about four 8 oz cups.

Ingredients

  • 2 cups of water, which is 16 fluid ounces
  • 2 cups of apple juice or fresh apple cider, another 16 fluid ounces
  • 4 teaspoons of loose leaf black tea, about 8 grams, or 4 tea bags
  • 1 cinnamon stick
  • 3 whole cloves
  • A strip of orange peel
  • Maple syrup or honey, served at the table rather than stirred in

Instructions

  • Warm the water, juice and spices. Bring the water, apple juice, cinnamon, cloves and orange peel to a low simmer and hold it there for five minutes, until the pan smells of cinnamon and orange.
  • Steep the tea off the heat. Take the pan off the burner, add the tea and steep four minutes. Black tea left on a simmer turns bitter.
  • Strain and pour. Strain into mugs or a warmed pot. An apple slice in the cup is decoration, and a good one.
  • Sweeten in the cup. Apple juice is already sweet, so taste first. A teaspoon of maple syrup suits it better than sugar.

For a caffeine free pot, swap the black tea for rooibos or for an apple cinnamon herbal tea and steep five to seven minutes. Any of the spiced black teas above works in place of plain black tea; leave out the cinnamon stick if the blend already has it.

As a Fall Tea Latte

Chai, pumpkin spice, toffee pu-erh and hojicha all take milk. Brew the tea double strength, 2 grams of leaf or one tea bag in 4 ounces of water, for five minutes. Add 4 ounces of steamed milk and a dusting of ground cinnamon. Hojicha powder is whisked rather than steeped: half a teaspoon in a little warm water, then the milk. Fruit teas such as cranberry and apple are better without milk.
