As a semi-fermented tea, Milk Oolong falls between a black and green tea in oxidation. The production process begins with leaves plucked from gardens situated between 500 and 1200 meters, harvested from March to December. The plucked leaf is carefully withered in regulated rooms to achieve the precise level of fermentation. Following fermentation, the tea is rocked, sifted to isolate the prime leaf, steamed over hot fire, and finally dried and re-sorted for quality. This labor-intensive process results in relatively small quantities—only 80,000 kg are produced annually—making this Oolong tea a coveted luxury ingredient.
