When brewing Sencha or Genmaicha, boiling water should be poured into the Yuzamashi, allowing it to cool before transferring the water into the Kyusu. This method achieves the perfect temperature of 176°F (80°C) for steeping these delicate teas.
For Gyokuro, the method involves pouring boiled water into the Yyunomi (teacup) prior to moving it to the Yuzamashi, and finally into the Kyusu. This careful technique ensures the water reaches the ideal brewing temperature of 158°F (70°C).
